# Expert Advice:

01 -
  • You get that intoxicating fudgy texture while secretly eating something with actual protein in it
  • The applesauce keeps them incredibly moist without needing a cup of melted butter
  • Nobody will ever guess these are the lighter version unless you tell them
02 -
  • Underbaking slightly is your friend because these continue cooking as they cool and that residual heat creates the ultimate fudgy center
  • The batter will look thicker than traditional brownie batter and this is completely normal because the yogurt creates a different consistency
  • Room temperature ingredients help everything blend together smoothly so try not to use cold eggs straight from the fridge
03 -
  • Let your ingredients come to room temperature before starting because this helps them emulsify properly
  • Use parchment paper with overhanging sides to create handles for easy removal from the pan
  • For the cleanest squares, chill the cooled brownies in the refrigerator for 30 minutes before slicing
