01 - 4 skinless, boneless cod fillets (6 oz each)
02 - 1/2 teaspoon kosher salt
03 - 1/4 teaspoon freshly ground black pepper
→ Cracker Topping
04 - 30 Ritz crackers, crushed (approx. 1 sleeve)
05 - 4 tablespoons unsalted butter, melted
06 - 2 tablespoons fresh parsley, chopped
07 - 1 teaspoon lemon zest
→ For Baking
08 - 1 tablespoon lemon juice
09 - Cooking spray or extra unsalted butter for greasing
# Directions:
01 - Heat oven to 400°F. Lightly grease a baking dish with cooking spray or melted butter.
02 - Pat dry cod fillets using paper towels. Season both sides with kosher salt and black pepper. Arrange fillets in the prepared baking dish and drizzle evenly with lemon juice.
03 - In a mixing bowl, combine crushed Ritz crackers, melted butter, chopped parsley, and lemon zest. Stir until crumbs are well-coated and evenly moistened.
04 - Evenly press the cracker mixture onto the top of each cod fillet to form a golden crust.
05 - Place the baking dish on the middle oven rack and bake for 18 to 20 minutes, or until the fish flakes easily with a fork and the topping turns golden brown.
06 - Transfer fillets to plates and serve immediately. Optionally garnish with lemon wedges.
